stuffed peppers, butterfingers & travelling tips

Over the weekend, my husband made me a delicious dinner!  He has been doing a lot of the cooking lately, so it’s about time I give him some credit. 🙂

Stuffed peppers with a side of asparagus…yum!

The peppers were stuffed with a mix of brown rice, spinach and spices and topped with cheese.  Baked in the oven at 400 degrees for about 25 minutes, the peppers came out perfect.  The cheese was bubbling and the peppers were soft.

The asparagus was sprinkled with olive oil, salt, pepper and parmesan cheese and cooked at 400 for 15 minutes.

So delicious and filling that I could barely finish both halfs.

Another delicious treat over the weekend was a Butterfinger Smoothie ala The Fitnessista!

She wasn’t kidding when she said that it really tastes like Butterfingers…it really does!  I skipped the mesquite and added chocolate almond butter as my nut butter of choice, but I bet that you could make it with any type of nut butter.  I also added 1 cup of greek yogurt for more protein.

I first tried the smoothie on Saturday…then made it again on Sunday, Monday and Today!  Delicious!

We are headed to Florida for Thanksgiving, so I am made sure to pack my magic bullet in my suitcase for smoothies while away.


You might think I’m crazy for packing a blender in my suitcase, but it makes eating healthy on vacation even easier!  A smoothie is a perfect meal or snack…and is extremely quick and healthy if you have the right ingredients.

I am bringing my magic bullet cup, which twists right into the blender fo easy belnding.  Then, flip it over and enjoy!  No need to find another glass in a hotel room. 🙂


Along with the bullet, I also packed some goodies in my suitcase:

  • nut butter packets
  • protein powder packets
  • chocolate milk
  • and I will pick up bananas once we get there
  • ice from the ice machine

Perfect ingredients for a smoothie on the go. 🙂

sweet & spicy quinoa

I haven’t been posting nearly as much as I normally do.  Life is just simply getting in the way.  But, you can rest assured that I am still eating like I normally do – just more!

Breakfasts have been smoothies, as usual. 🙂

My favorite Chocolate Cherry Bomb Smoothie.  This smoothie is thick, delicious and packed with protein and nutrients which is perfect for my growing belly!

And, I love that it is pink. 🙂

Along with my smoothie, I snacked on a piece of homemade apple raisin walnut bread made by Lauren.  It is super delicious!

Lunch included some leftovers from dinner.  I decided to try out Angela’s Mandarin & Maple Spiced Quinoa with Cranberries, Apricots, and Almonds.

This was absolutely delicious!

It was sweet from the maple and dried fruit and spicy from the cinnamon and nutmeg.  We all really loved it.  I will definitely be making it again!

Served on a bed of spinach for some greens with dinner.

Definitely go try it out!  It will be a crowd pleaser.

I am so excited for the weekend…lot’s of stuff to do. 🙂  Have a great one!

happy 1st blogiversary

One year ago today, I wrote my very first blog post!  It was a very short post, but it was the start…


Over the past year, I have had a great time blogging about everything from healthy eating to fitness apparel to my travels to my pregnancy.  It has been fun to get to know others in the blogging community who share similar interests.

I can’t wait to see what this next year holds. 🙂  Thank you for sticking with me and reading my blog!


The past week, my meals have been very simple.

And, a lot of these pumpkin muffins that I burnt to a crisp. 🙂

I love fall!

We did whip up one delicious dinner, however.

Lentil Almond Stir-fry.

This is one of my favorite meals.  It is so simple, but the flavors work together so so well.  I would make it every week…it’s that good!

The only change that I made, was the addition of radishes from our CSA.

And, to make a simple recipe even simpler, I used the pre-cooked Black Beluga Lentils from Trader Joe’s.

Topped with the delicious mint and yogurt sauce…this was a hit!

And, a slice of warm bread on the side.  Perfect. 🙂

saratoga springs, ny

We have been having a tremendous time away in Saratoga Springs!  Good food, good fun and good company.  Since we are heading out to another show tonight, I will leave you with some photos of our first day of eats (Friday).

Before heading out, I went on a quick 40 minute run to move my legs (about 4.5 miles).

Then, we  mixed up some smoothies and headed out of town…

My smoothie contained:

  • 1 frozen banana
  • 1 cup frozen mango
  • 4 frozen strawberries
  • 1 scant scoop Vega chocolate protein powder
  • 1 tbsp pumpkin seeds (for iron)
  • 1.5 cups coconut water

All blended up and ready to go.

Once in Saratoga, we checked into our Bed and Breakfast and set out to walk around town and find some lunch.

We decided on Wheatfields, a fun restaurant that uses all local ingredients!

If you can’t read the sign because of the Fedex truck (!), it says: from local fields to your plate!

I chose the chopped salad with romaine, tomato, cucumber, chickpea, Gorgonzola and a fruity vinaigrette that I requested on the side.  It was delicious.

After lunch, we hit up Betty’s Cakes for a Cupcake Sundae!  They were handing out $1 off coupons on the street, so we had to try it out.

Bettie’s is a bakery set up as a 50’s style diner!  I loved it.

We decided on a Chocolate Peanut Butter Cupcake Sundae – a cupcake topped with vanilla softserve, whipped cream, sprinkles and a cherry!

We split it…and we killed it!

For dinner, we went to The Local Pub and Teahouse!  A pub and teahouse?!  What could be better!

We loved the logos.

And, the atmosphere and food were awesome!  We are considering hitting this place up again before we leave…

I ordered the veggie burger.

This was not just any veggie burger…it was a stack of grilled eggplant, roasted red peppers, avocado and mozarella cheese!  With balsamic vinaigrette for dipping.  It was out of this world.

Then, we headed to the Dave Matthews band show at SPAC.

No cameras were allowed inside, but we had fun!

We walked all over Saratoga yesterday – and too and from the concert.  In total, it was probably about 6-7 miles of walking!  Phew.
