bbq pizza-dilla

Last night after work, I headed out the door for a run around Southie.  I love my morning workouts, but I have learned to love running at night as well.  I think I like the mornings so much because you start your day off on the right foot and get your workout out of the way.  But, now that I am not training for anything specific, I realized that it is ok if I miss a morning workout.  In fact, sometimes running at night is just as good and allows you to release any stressors the day may have caused.

It felt great out last night.  A cool breeze was coming off of the water and there were a lot of people out running and walking.  I never see that many people in the mornings!!  I ran for just over an hour and felt great!  Refreshed after my day.

I came home to make a quick dinner.  My first thought was a pita pizza, my next thought was a quesadilla.  Then, I combined them!

A Pizza-Dilla!

Start with a wrap of choice.

Spread half of it with tomato sauce (or tomato paste as I did here).

Then, layer on your cheese and toppings of choice.  I went with pepper and italian seasoning.  The cheese is a blend of cheddar and mozarella.

Drizzle with bbq sauce, if desired.  I love bbq sauce, so this was a no brainer for me. 🙂

Fold the wrap in half and grill on the grill or grill pan for a few minutes on each side until the cheese is melted.

Mmmm…a delicious, eat with your hands, quesadilla!  That tastes like pizza. 🙂

This could be great as an appetizer too!

watermelon smoothie

I’m not sure why I haven’t thought of it before – adding watermelon to a smoothie!  Watermelon is a favorite fruit of mine, mostly because it reminds me of summer. 🙂

Watermelon is also an excellent source of lycopene (just like tomatoes!).  Lycopene is a bright red carotenoid pigment found in some red fruits, like watermelon and tomatoes.  It is a very potent antioxidant!

This morning, I was out of bananas, so I looked up a few ideas for using watermelon in a smoothie and came up with a combination of all the recipes I viewed…and it was delicious!

I liked all of the main ingredients: watermelon, ginger, almond.  So, I gave it a try and added a few smoothie staples as well.

Watermelon Smoothie

(adapted from One Perfect Bite)

  • 2 cups watermelon
  • 1 cup ice
  • 1/4-1/2 cup coconut water
  • 1 tbsp honey
  • 1 scoop vanilla protein powder
  • 1 tbsp hemp seeds
  • 1/2 tsp ground ginger
  • splash almond extract

Surprisingly, this was delicious!  I loved the watermelon with the kick of ginger.  YUM!

This would also make a delicious summer cocktail…just omit the protein powder and add a liquor of your choice.

allandale farm csa, week 10

We spent the weekend with friends for a wedding in Maine.  It was a gorgeous weekend and we all had a blast!

I realized that I never did a post on our CSA goodies from last week, so I wanted to get this in before picking up this weeks goodies tomorrow.

We got a few different things last week that I didn’t have a chance to play around with yet.  Hopefully this week!

Cucumbers

Corn

We get so many delicious fresh vegetables every week!  I will be sad in a few months when our CSA ends.

the best damn granola

It was a juice day today!

I woke up and remembered that I had a fridge full of celery, carrots, beets and apples…what better thing to make with those ingredients than a healthy, thirst-quenching juice.

I washed and chopped the ingredients, so that they would fit into my juicer.

Then, juiced away.

I love the color when I add beets.  Beets and celery are a great combination!

I also had some toast with almond butter and jam for breakfast.

A few hours later, I was hungry!  So, I made a few peanut butter crackers to hold me over until lunch.

For lunch, I bought again!  This weekend, it is a priority to hit up the grocery store.  Over the past 2 weeks, I have bought lunch more times than I ever have in the past – oopps! 🙂

A Meditteranean Wrap from Au Bon Pain – lettuce, rpasted red pepper hummus, cucumbers, tomatoes, kalmata olives, sun-dried tomato spread and feta.

It is one of my favorites!  I just love feta!

Along with some watermelon that I packed from home.

My mid-afternoon snack included a new granola!

Cyndi from The Best Damn Granola Co. was gracious enough to give me a bag of her delicious granola to try!

I chose the Fig ‘n Nuts because it is her signature and is so good with the hints of cinnamon and spice.  I could eat this by the handful – and I have!

The ingredients are pretty good and everything is made by Cyndi and her family.  Check out their website for more info!

And, the best part is the chunks of fruit and nuts in each bag.  Mmmmmm……

And, it is super flavorful, but not too sweet.  In fact, it is much more spicey than sweet.

My snack consisted of plain yogurt with the granola.

We are off to the Patriot’s Pre-season game tonight!  Have a good one.

i ate chicken today

That’s right…after about 5 months of not having any meat, I gave in.  I ate chicken at lunch today.

Now, don’t get me wrong – there is nothing wrong with eating meat.  Personally, I have never loved meat, and even poultry made me a little quesy.  It makes me feel sluggish after eating it.  So a few months ago, I decided to cut it out of my diet to see how my body responded.

I responded well.  I added in more beans and other forms of protein and fueled my body in a way that worked for me.  I felt great!  I feel great!  For the past few years, I really think that the only reason I ate chicken was because it was what we made for dinner every night.  Once I started to really get into cooking, I realized that I can make so many fabulous vegetarian dishes, that I was never missing the meat.

I never wanted meat after that.  I craved fresh vegetables and beans.  I loved eating big salads with veggies, nuts and cheeses.  I still love that.

Recently, however, I have been wanting chicken.  I’m not sure why.  Maybe because my eating has been a little sub-par due to not making grocery shopping a priority or maybe because I haven’t been eating as much protein.  Whatever it was, I wanted to see how my body responded to the chicken after so long without it.

So, today I took a leap and ordered chicken on my salad!

I only ate a small amount to make sure everything sat well in my tummy – so far so good.

But, let me tell you what I discovered – I did not love it, by any means!  I want to continue to be open with myself and eat what my body wants.  I would choose a vegetarian dish over meat any day, no doubt.  But if my body thinks that I want chicken, then I might give it a little chicken every now and then.

I have never considered myself to be a vegetarian, but I do eat a mainly vegetarian diet.

I eat fish every so often, especially in the summer and sometimes want tuna fish, like last night.  I want to eat what my body craves, so even though I don’t see myself making a chicken dinner any time soon, I am happy with my decision today! 🙂

Anyways, enough rambling about my meat eating…on to my eats for the day.

Breakfast was fun.

2 scrambled eggs with a cinnamon raisin bagel

It felt like the weekend with this meal!  I loved it.

For lunch, I headed to Panera Bread and ordered the Fuji Apple Chicken Salad with no cheese and the dressing on the side.

Served with a baguette, this salad was delicious and very summery.

I love cheese, but sometimes I order salad’s without it.  If the salad already has a lot going on, which this one did, then I don’t need the cheese and extra calories.

This salad and baguette really filled me up, so my afternoon snack was light – yogurt and cherries.

After work, I headed out for a run.  Just a quick run tonight (30 min ~ 3.5 miles) + a 10 minute cool-down walk because I was hungry for dinner!

I heated up some Trader Joe’s Tomato Soup & a Grilled Cheese and had dinner within minutes!

Mmmmm…simple dinners are perfect for the summer!
