watermelon smoothie

I’m not sure why I haven’t thought of it before – adding watermelon to a smoothie!  Watermelon is a favorite fruit of mine, mostly because it reminds me of summer. 🙂

Watermelon is also an excellent source of lycopene (just like tomatoes!).  Lycopene is a bright red carotenoid pigment found in some red fruits, like watermelon and tomatoes.  It is a very potent antioxidant!

This morning, I was out of bananas, so I looked up a few ideas for using watermelon in a smoothie and came up with a combination of all the recipes I viewed…and it was delicious!

I liked all of the main ingredients: watermelon, ginger, almond.  So, I gave it a try and added a few smoothie staples as well.

Watermelon Smoothie

(adapted from One Perfect Bite)

  • 2 cups watermelon
  • 1 cup ice
  • 1/4-1/2 cup coconut water
  • 1 tbsp honey
  • 1 scoop vanilla protein powder
  • 1 tbsp hemp seeds
  • 1/2 tsp ground ginger
  • splash almond extract

Surprisingly, this was delicious!  I loved the watermelon with the kick of ginger.  YUM!

This would also make a delicious summer cocktail…just omit the protein powder and add a liquor of your choice.
