happy birthday, dad

Last night, we headed out to my parent’s house for a birthday dinner for my dad!

We started the night with Mojitos!  With, a lime infused rum made by dad.

And, cheese (from the farmer’s market!) and crackers.

The cheese was delicious, but I only had a few pieces to save room for dinner.  It is so easy to fill up on finger foods and appetizers since they are usually one bite and you don’t realize how much you are eating.  I always try to make sure that I keep track of my apps because I can get a little out of control. 🙂

My parents had a delicious spread for dinner!

Greek Salad

Cucumbers, tomatoes, black olives, feta, a drizzle of olive oil, salt and pepper.  This is the greek salad that you would get in Greece – no lettuce and no ‘American’ greek dressing.  It is my favorite!

Low + slow sweet potatoes!

Sugar snap peas fresh from the farmer’s market.

And, grilled fish.

It was a tremendous spread.  And, one that you don’t need to watch what you eat at…

You cannot go wrong with fresh veggies.

It was the perfect light meal before my Dad’s absolute favorite dessert – Strawberry Shortcake!  With native strawberries andfreshly made biscuits and whipped cream.
