I never thought I would be this sore today! And, I don’t really have an appetite at all…maybe because of the soreness? I think I am still just really shaken up.
Therefore, my eats today have included tea, toast with almond butter, yogurt and dried fruit. Exciting, right?!
Dried cantaloupe, kiwi, strawberry, raspberry, pineapple and lychee. The cantaloupe and kiwi are sweetened with natural cane sugar. Normally, I stay away from dried fruit with sugar, however, sometimes I go for it as a treat. And, on a day like today, my body wanted some sugar. 🙂
I started to get hungry around dinner time, though, so we made up a few BIG Greek salads! Yummy.
Brant chopped up some romaine to make it more of a chopped Greek salad.
And, served it with diced tomato, orange pepper, cucumber, avocado and feta cheese.
Drizzled with olive oil and sprinkled with oregano and a little sea salt and pepper.
This was a huge and totally delicious salad that got lots of veggies into my body after lacking them all day long!
With some homemade pita chips on the side.
I spread a whole wheat lavash with a little butter, Parmesan cheese and Herbs De Provence. Then toasted it until browned.
Another great simple dinner. This is perfect for a warm evening because there is no cooking involved, just chopping and munching!
Time to relax my poor body!!

Where do you buy your dried fruit (especially the ones without sugar)? It looks delicious!!!
I buy a lot of it from Trader Joes, or from Nuts Online!

Dried fruit looks yum plus the salad looks perfect! I love veggie shots! I hope you’re not as sore today!
