simple foods

For lunch today, I was feeling a smoothie.  Luckily, I was headed home to walk the dog, so I got my wish!

(I warned you that my food would be boring!)

I know that you have seen this a million times on the blog, but I bring you:

A Green Monster Smoothie!

Made with some great stuff:

  • 1 frozen banana
  • 2 cups frozen spinach
  • 2 tbsp hemp powder, vanilla spice
  • 1 scoop chocolate amazing grass
  • 1 cup frozen mango
  • 1 cup vanilla drinkable yogurt (Organic Valley)
  • 1 cup cold water

I just love these smoothies!

But, for lunch, I needed something salty and to chew on as well, so I had some homemade hummus (from Clean Food) and plantain chips (from Trader Joe’s!).

Once home from work, I decided to go on a run.  I ran my new favorite running route – around UMASS Boston.  It is a 5.5 mile route completely along the water.  On a gorgeous day like today, it was just what the doctor ordered.

I have taken about 2 weeks off of any serious running.  My body was tired and mentally I just needed a break.  I ran a few short, slow runs over the weekend, but really just wanted the time completely off.

Well, it made me realize why I love to run!  It is so freeing and exhilarating.  Even though that first mile might be tough, I feel awesome when I finish.  It is a great way to get outside and explore.  I hope 2 weeks didn’t completely kill my endurance though…I did not run nearly as fast today as I normally would have.  But, I’m ok with that!  I still completed 5.6 miles in 51 minutes.

I was on my own for dinner, so I felt like something quick and easy since it was nearly 8 o’clock when I got home.  Two scrambled eggs with toast and Brussels sprouts.

I scrambled my eggs with a little goat cheese – yum!

And, sauteed my Brussels sprouts in a little olive oil, salt, pepper and maple syrup.

Served with 2 slices (which is one serving) of Carrot Raisin Manna Bread.  This stuff is amazing!

I love dinners like this!  So simple and delicious.

The sun is shining today!!!  Doesn’t that just instantly put you in a good mood?!  For me, it definitely does. 🙂

I’m not going to lie, my last few meals have been super duper B-O-R-I-N-G!!!  I’ll whiz right through them so that I don’t bore you.

Lunch yesterday consisted of leftover Quinoa from the other night.

It was a mix of quinoa, lemon juice, salt, pepper,dried thyme, chopped walnuts, raisins and goat cheese sprinkled on top.  This is usually my go-to mix because it is simple and very tasty.

Served along with vanilla yogurt, granola and a kiwi!

I definitely didn’t finish everything.  This was a filling combo.

Dinner was more leftovers – 13 Bean Chili Leftovers!

This time, I topped my chili with some plain yogurt and parm cheese to cut the spice a bit.  It helped!  But, my mouth was still burning by the end – good thing I love spicy food.

I also spread a whole wheat wrap with a little butter and sprinkled it with parm cheese.  Then, stuck it in the toaster oven until bubbly and crispy.  Just cut them into whatever shape you like and you have homemade pita chips.  I buy Whole Foods brand pita bread because there are only about 3 or 4 ingredients in them.  These are one of my favorite things to make!

We sure did have a tired pup last night. 🙂

He loves to snuggle!

Breakfast this morning was Banana Oatmeal.

I cooked 1/2 cup rolled oats (which are not nearly as good as steel-cut oats!) with 1 tbsp of ground flaxmeal and 1 small banana.

Then, topped my oats with banana chips (unsweetened), 1/2 tbsp chunky peanut butter, and 1/2 tbsp homemade pistachio butter.

I love oatmeal.

I apologize for having some boring eats over the next few days as I try to eat through my crazy amount of food in my fridge and pantry.  I have weeks where all I want to do is make something new and fun everynight of the week.  Then, I have weeks where I don’t really feel like cooking.  Well, this has been one of those weeks.  And, my cabinets and fridge are so packed with homemade goodies that I have made over the past month (nut butters, granola, granola bars, chili, chickpeas, etc) that I need to start mission ‘eat it up’!  So, bear with me. 🙂
