almond butter oats

I met up with some girlfriends for dinner last night.  Sometimes, I find that taking pictures of my food at restaurants kind of ruins the mood, especially when I am deep in conversation with the girls!  So, no pictures of dinner – I did have an awesome Springtime Risotto, though.  Served with asparagus and fiddleheads – YUM!

This morning, I made up some Steel Cut Almond Butter Oats To-Go, since I was in a rush.

I had an almost empty almond butter jar, so I used that to transport my oats to work.  It worked so much better than making up an instant packet when I got here.

I made the steel cut oats on the stove while I got ready.  They take about 20 minutes to cook 1 serving, but it is so worth it if you have the time.  I used 1/4 cup steel cut oats, 1 tbsp flax meal, 1/2 tbsp chia seeds in the mix.

Then, I poured the cooked oats into my almost empty jar.  Instead of having the nut butter on top of my oats, it was at the bottom.  (Benny wanted some too).

I topped them with mango jam, coconut butter and a bit of chocolate granola.

I have had the mango jam for awhile now because it is way to sweet for me!  But, I’m not one to waste food, so I use a bit here and there.

I popped the cap on the jar and took it to work with me.  It was actually still warm when I dug in.

I was out of bananas (shocking?!) to add to my oats, so had some fruit salad instead.

I’m stuffed!

  2. I rarely take pictures of my food when I am eating out. I am just not THAT comfortable whipping out my camera at a restaraunt and taking food pictures.

  3. Jen-your pics of food are always amazing….but the dog addition is really enhancing them. He is so cute! And apparently interested in blogging!
