It has felt so chilly out these past few days! 42 degrees this morning when I walked the puppy. We were both chilly! But, we went for a great 30 minute walk to get the blood flowing (after he helped me do some work…)
He may look like a small dog, but this guy can move. He likes to run, instead of walk, so my ‘walks’ with the pup are more like ‘jogs’. So fun.
Once home, I made my best smoothie yet. 🙂
Mango Guava Smoothie
- 1 frozen banana
- 2 mini guavas
- 1 cup frozen mango
- 1 cup frozen spinach
- 1/2 cup 2% cottage cheese
- 2 tbsp vanilla spice hemp protein powder
- 1 tbsp ground flax meal
- 1 cup coconut water
- 1/2 cup water
Topped with the last of my raspberry Galaxy Granola.
Not sure what is was, but this smoothie was thick, creamy and delicious. It made a TON of smoothie (almost 4 cups worth!). I calculated the calories to see if I was being ridiculous and the entire thing is only about 450 calories. Score!
Now, I feel like I am really bragging today with my best smoothie ever, but lunch was amazing too.
13 Bean Chili that I made last night! It came out absolutely delicious! I ended up simmering it on low overnight so that the beans would get a bit more tender, and I am so glad that I did. It was the perfect blend of beans, veggies and spices. Although, it is very spicy, which I love! If you don’t love spice, maybe use regular tomatoes instead of fire roasted.
Seriously! Give this a try, you will not be disappointed…as long as you love beans. 🙂 And, it is cheap! Check it out.
Price per Serving of Bean Chili
- 1 Bag Bob’s Red Mill 13 Bean Chili = $4.99
- 2 15 oz cans Fire Roasted Tomatoes = $1.99
- 2 8 oz cans Tomato Sauce, no salt added = $1.19
- 1 6 oz can Tomato Paste = $0.69
- 4 carrots = $0.15 (from my Russo’s trip at $0.98 per bag)
- 3 celery stalks = $1.99 per bag, so $0.39 for 3
- 1 head Kale = $1.99
- 2 tbsp Chili Powder = $0.49
- 1 medium onion = $0.69
- 4 cloves garlic (I used pre-minced jar for $2.99) = $0.50
Grand Total = $13.07
And, it made 9 servings, so total per serving = $1.45!!!
You seriously cannot beat that. And, you could make it your own by adding whatever veggies you want, or keep it a simple bean chili.
I heated up my chili and topped it with some shredded mexican cheese and garlic sprouted sunflower seeds.
With some Dr. Kracker’s pumpkin cheddar flatbread on the side.
What a great lunch!
Even though it is chilly out today, it sure is beautiful.
