southwestern salad

I started my Friday with a Breakfast Cookie again!

Same ingredient list as last time:

  • 1/3 cup rolled oats
  • 1/2 tbsp chia seeds
  • 1 tbsp almond butter
  • 1/8 cup almond milk
  • 1/2 mashed banana
  • 1 tbsp hemp seeds
  • 1 tbsp vanilla spice hemp powder
  • 1 tbsp raisins

Topped with 1/2 banana, and maple cinnamon almond butter!

I love cookies for breakfast.  Especially super filling and satisfying ones. 🙂

Lunch was boring – a Lentil Burger with a slice of american cheese and ketchup on a sandwich thin.

Tonight, we headed to a fiesta!

I brought a Southwestern Quinoa Salad, which was delicious!

This is perfect for a summer party or a Mexican fiesta because it does have a little kick from the pepper.  The recipe is from Mark Bittman and you can find it here.

I chopped up the sweet potatoes and peppers as the quinoa was cooking.

(The sweet potatoes get boiled until tender)

Once everything was cooked and chopped, I just threw it all together in a bowl.  Then mixed and added some fresh veggies on top.

The dressing is a simple lime juice and olive oil.

The salad is refreshing, yet light and filling.  It was perfect.
