friday night pizza

I’ll whiz through lunch to get to the good stuff!

I packed a really boring salad for lunch today: lettuce with carrots, a Sunshine veggie burger and hummus.

And, a grapefruit!  This batch of grapefruits I bought are so sweet and juicy!!

This lunch didn’t keep me very satisfied, so I definitely snacked on dried fruit all afternoon

But, I was looking forward to our dinner!  Friday night pizza nights are the best!  And, that is all I wanted tonight.

Brant was cooking away when i got home, and had already started on stretching out the dough.

This is our favorite dough from Trader Joes – Herb Pizza Dough!

We decided on two different pizza’s – Eggplant, Roasted Red Pepper & Feta and BBQ Onion Jalapeno.

My favorite part about making homemade pizza is picking out the toppings.  There are so many options to choose from, and filling the pizza with veggies helps to make it that much healthier.

We started with the Eggplant Red Pepper & Feta Pizza!

While the crust was pre-baking, I made up some pizza sauce – 1/2 small can tomato paste, 2 tbsp water, 1 tbsp italian seasoning, 1 tsp garlic powder, 1 tsp onion powder, pinch of salt.  Mix it all up and spread it on your pizza.

Then top with mozzarella cheese, grilled eggplant (grilled with olive oil, balsamic, salt and pepper), roasted red pepper and feta cheese.

Then bake at 450° for about 10 minutes.  This one came out delicious!!

Next up, BBQ Onion & Jalapeno.

This was on Trader Joe’s Whole Wheat crust.  Really good, too!  Instead of pizza sauce, we used Annie’s BBQ sauce as the base.

Mmmmm….BBQ sauce is so good, especially on pizza!

This was topped with a thin layer of mozzarella, then mexican blend cheese.  Toppings included sauteed onions and jalapeno peppers.

Baked for 10 minutes at 450°, it came out sizzling hot!

I love the kick from the jalapenos.

I had a big slice of both.

It’s the perfect rainy Friday night comfort food!
