mexican goodies

Happy Saturday!

I had a fairly relaxing morning over here and started my day with a glass of juice.

In the mix were:

  • 2 medium carrots
  • 3 celery stalks
  • 1 medium apple
  • 1 inch ginger

I was meeting a friend downtown for brunch, so I just needed a little something to hold me over while I got ready.  It did the trick.

We ended up going to Union Bar and Grille for brunch.  It was great!  We both ended up with the Huevos Rancheros because we love beans!

Crispy Tostada with 2 Eggs any style, Black Beans, Cheddar Cheese, Home-fries & Salsa Ranchera. I’m pretty sure they forgot the salsa, but it was still pretty good.  Luckily, the restaurant was not too busy, so we sat and chatted for hours.  Then I headed home to get some things done.

I took a break before dinnertime to go for a run.  6 miles in 54 minutes – not too shabby.  I had trouble picking my feet up today, though.  I should have had a snack before the run because I definitely needed some fuel.  Live and learn!

Around 7pm, Brant and I were both starving but didn’t feel like cooking, so we headed out to Salsa’s Mexican Grill.

We started with some chips, salsa and sangria!

For dinner, I decided on the Veggie Burrito in a wheat wrap with black beans.  I always eat the filling out of my burrito, and leave the wrap.  The filling is the best part – rice, veggies and beans – yum!

There could have been more veggies, but they definitely did not skimp on the beans.  I only finished about 1/2 to 3/4 of this, but I am stuffed!

I guess I was feeling like a little mexican today!  This is my type of food – simple, flavorful, delicious and real food!  I rarely (i mean, rarely!) ever eat out twice in one day.  I barely even did anything in my kitchen today, and you know what?!  It felt great!  I love to cook, but sometimes it’s nice to have a treat day.  We all deserve it.  Tomorrow, I have some goodies to make for the week.
